Follow these simple steps for a barista-worthy matcha latte:
1. Sieve your matcha (the anti-lump secret!): take 1 to 2 teaspoons of your Arigato matcha and sieve it directly into your bowl. This step is essential for a perfectly smooth drink.

2. The matcha "shot" (the intense base): add about 50 to 70 ml of hot (but not boiling!) water. Ideally between 70°C and 80°C. Water that is too hot would burn the matcha and make it bitter. Whisk vigorously with your chasen (or your whisk) in "W" or "M" shapes until you get a beautiful light and homogeneous foam. This is your concentrated matcha!
